My Favorite, Apricot Goat Cheese Log
6 ounces goat cheese
3 ounces cream cheese
1 tbsp. chives, minced
1/2 cup sliced almonds, toasted
pinch of pepper
1/4 cup apricot marmalade
Directions:
1. In a small bowl, mix the goat cheese, cream cheese, chives, 2 tablespoons of toasted almond (crunched), and pepper. Make sure the cheeses are at room temperature.
2. Form a log. Garnish with the remaining toasted almonds on top. Chill for about an hour in wax paper. Right before serving, heat the apricot marmalade and pour on top. Serve with French bread or crackers.
