Coconut Coated Party Dates
1/2 lb. almonds, without peel & toasted
5 tbsp. unsalted butter
1 lb. soft pitted dates (pulse in food processor)
1/4 cup warm water, as needed
1/4 tsp. cinnamon
¼ tsp. grated nutmeg
1 cup grated coconut
Directions:
1. Toast the almonds in a pan without oil on low heat. In another skillet on low heat, melt the butter, add pitted dates (after processing) and stir well until it becomes a moist mixture. If needed, add a few drops of warm water to make it a little more moist rather than adding more butter.
2. Remove from stove; add the nutmeg and cinnamon. Allow to cool. Take small piece of date dough, place an almond in the center and roll into an oblong shape, like the shape of a date. Repeat using all of the date dough. Roll each date in the coconut and arrange on a serving dish. Serves 8-12.
