Rustic Ricotta Orange Zest Crostini
½ loaf French baguette, sliced
2 garlic clove, peeled
6 oz. fresh ricotta cheese
Salt/pepper to taste
Zest of 1 large orange
Drizzle of Extra-virgin olive oil
Directions:
1. Preheat the oven on broil.
2. Cut the bread slices to about 1/3 inch rounds. Lay the slices evenly on a cookie sheet. Place it in the middle rack of the oven and broil for about 1 minute or until just golden.
3. When the bread is ready, remove from the oven. While still hot, rub each bread slice with the peeled garlic clove. Place about a tablespoon of fresh ricotta cheese on top. Sprinkle with salt and pepper, freshly grated orange zest, and top with a drizzle of extra virgin olive oil.
