Antipasto Salad Simply Made
6-8 oz. spring salad
1/2 cup marinated artichokes
1/2 cup marinated mushrooms
handfull black olives
1/4 lb. thin mortadella
1/4 lb. thin salami
1/2 cup roasted peppers
handfull small mozzarella
handfull cubed provolone
handfull cubed asiago
10-15 basil leaves
2-3 tbsp. extra virgin olive oil
1 tbsp. wine vinegar
salt/pepper to taste
Directions:
1. Place the salad green on a large plater. Scatter it around.
2. Places the remaining ingredients strategically in little pockets on the platter.
3. Whisk the vinegar, oil and salt pepper together, then drizzle over the salad. Add fresh chopped basil on top.
