Marinated Artichoke Hearts
2 jars of artichoke hearts in water
2-3 tablespoons extra virgin olive oil
Zest and juice of 1/2 lemon
1 teaspoon small capers
8-10 fresh basil leaves
Freshly ground pepper
Directions:
Drain the artichoke hearts and gently squeeze the extra water out. Place in a bowl and all the remaining ingredients.
Serve as an appetizers or a side dish. This dish is easy to make, however using fresh artichoke rather than in a jar is best. If you have artichokes in your pantry, this dish is a great impromptu for unexpected guest!
