Mixed Green with Oranges and Strawberries
1 bunch fresh mixed green
1 orange, peeled and sectioned
20 strawberries, cut in halves or quarters
2-3 slices of prosciutto or favorite ham (optional)
Dressing:
3 tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
2 tablespoons scallions, minced
2 tablespoons fresh mint, minced
2 teaspoons honey
Salt and pepper to taste
Directions:
In a bowl, add all the ingredients for the dressing and mix well. Serve over mixed greens, orange, and strawberry salad.
This is a refreshing dressing which can be used over the mixed green salad or even on top of boiled potatoes as a potatoe salad.
