20 ripe medium size grape vine tomatoes, stems and core removed
1 large head of garlic, peeled and divided into cloves
1/3 cup extra virgin olive oil
Salt and pepper to taste
1 tablespoon dried thyme
10-12 fresh basil leafs
Directions:
1. Preheat oven to 350F.
2. Place tomatoes and garlic in a bowl. Add olive oil and season with salt and pepper and thyme. Mix gently.
3. Line 1 large baking pans (with sides) with parchment paper or aluminum foil. Place the tomatoes and garlic mixture and pour the olive oil from the bowl.
4. Bake for 20 – 30 minutes until the tomato skins loosen and the garlic is golden. Remove and discard tomato skins.
5. Top with fresh basil and serve with crusty bread.
Since the tomato skins are so soft, I don’t remove the skins. I actually find it very flavorful. I like the simplicity of this dish and I find it easy to pair with grilled fish, on top of a hamburger, or grilled sausage. My favorite way to eat it, is with crusty bread and a chunk of pungent cheese on the side. What else do you need?
