Pasta with Creamy Ricotta and Walnuts
1/2 lb. pasta
¼ cup walnuts
7 oz. of fresh ricotta
Pinch of nutmeg, freshly grated
coarse salt & black pepper
2 tablespoon extra virgin olive oil
Fresh grated parmesan or romano cheese
Directions:
1.Cook the pasta in boiling salted water until al dente. Chop the walnuts.
2. Place the ricotta in a warm bowl and work it with a wooden spoon until smooth. Add 2 tablespoons of the hot pasta water to render the ricotta creamy. Add the olive oil, walnuts and a pinch of nutmeg.
3. When the pasta is ready, strain and add it to the ricotta mixture. Mix well by folding the pasta to the ricotta mixture.
4. Add the walnuts, a generous amount of black pepper and grated cheese and serve hot. Serves 4
A quick kid-friendly favorite! It was mine growing up.
