Greek Yogurt Cake


1/2 cup Greek yogurt
1 cup sugar
3 eggs
1/2 cup canola or olive oil
1 teaspoon vanilla
1 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder

Directions:
  1. Preheat oven to 350ยบ. Butter a bundt cake pan.
  2. Mix the yogurt, eggs, oil, sugar, and vanilla in a mixing bowl. Add the flour and baking powder and mix well. Pour the batter into the pan, and bake about 25-30 minutes or until a knife comes out clean.
  3. Let it cool for 10 minutes and then turn it out from the pan to a serving plan.  Add fresh berries on top or whip cream.
