2-3 garlic cloves, finely sliced 2 tablespoons golden raisins Pinch red pepper flakes 1 pound fresh baby spinach Salt and pepper to taste 3 ounces amaretti cookies, crumbled
1.Add the olive oil to a hot sauté pan and cook on medium heat the garlic slices for about a minute until beginning to color. Add the raisins, red pepper flakes and stir.
2.Add the spinach and cook quickly, turning until it has just wilted. Season with salt and pepper. Transfer to a serving dish and crumble the amaretti cookies on top and serve.
This recipe was inspired by a great Spanish tapas dish of spinach, garlic, raisins and toasted pine nuts, and an Italian recipe using fresh field greens with crumbled amaretti. I combined the two to make it my own recipe. It's a great side that can be made in 5 minutes. Enjoy!
