Cucumber Salad with Yogurt and Honey
1 large English cucumber, diced
1 ½ cup low-fat Greek yogurt
1 tablespoon dried mint
3 sprigs dill, roughly chopped
1/2 tablespoon fresh lemon juice
Zest ½ lemon
1. In a serving bowl, add the first six ingredients and mix gently.
2. Refrigerate for 30 minutes. When ready to serve, drizzle with honey on top and serve. Decorate with olives and cucumber slices.
A very light and healthy salad or snack. Use a little more honey and you may satisfy your sweet craving!
